Rajma Masala is a classic North Indian dish made with red kidney beans simmered in a rich, spiced tomato-onion gravy. Infused with aromatic spices, it delivers a hearty and flavorful taste. Perfectly paired with steamed rice, it makes a comforting and protein-rich meal.
Ingredients:
- Red Kidney Beans (Rajma)
- Onion
- Tomato
- Ginger-Garlic
- Green Chilies
- Cumin Seeds
- Turmeric Powder
- Red Chili Powder
- Coriander Powder
- Garam Masala
- Salt
- Oil or Ghee
- Fresh Coriander Leaves (for garnish)
Preparation Steps:
- Wash and soak red kidney beans (rajma) in water overnight or for 8–10 hours.
- Pressure cook the soaked rajma with water and salt until soft and tender.
- Heat oil or ghee in a pan and add cumin seeds, letting them crackle.
- Sauté chopped onions until golden brown, then add ginger-garlic paste and cook until fragrant.
- Add chopped tomatoes and cook until the oil separates from the masala.
- Stir in turmeric, red chili powder, coriander powder, and garam masala, cooking for a few minutes.
- Add the cooked rajma along with some cooking water and simmer for 10–15 minutes.
- Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
